Vegan Pesto
(enough for two large portions of cooked pasta)Blend together the following Ingredients:
30g nuts - cashews, walnuts or pine nuts are best
20g fresh parsley/basil
2tsp dried mixed herbs
2tsp vegan powdered parmesan style cheese
1/4tsp ground black pepper
1/2 tsp coarse salt
2Ts olive oil
1Ts lemon juice
1tsp water
1 heaped tsp vegan cream cheese - I used tofutti garlic and herb (optional)I served with whole wheat pasta, button mushrooms, chopped red bell pepper kidney beans and Mozzarella style sheese.
