Vegan Pesto(enough for two large portions of cooked pasta) 
Blend together the following Ingredients:30g nuts - cashews, walnuts or pine nuts are best20g fresh parsley/basil2tsp dried mixed herbs2tsp vegan powdered parmesan style cheese 1/4tsp ground black pepper1/2 tsp coarse salt2Ts olive oil 1Ts lemon juice1tsp water1 heaped tsp vegan cream cheese - I used tofutti garlic and herb (optional)
I served with whole wheat pasta, button mushrooms, chopped red bell pepper kidney beans and Mozzarella style sheese.
